摘  要:文章旨在评估日粮蛋氨酸铬添加水平对育肥猪生长性能、胴体性状及肉色的影响。试验选择平均初始体重为(71.26±1.68)kg的三元杂交猪(杜×长×大)600头,随机分为4组,每组5个重复,每个重复30头猪。各组猪饲喂的日粮分别在基础日粮中添加蛋氨酸铬形式的铬0、0.2、0.4和0.6 mg/kg,试验共开展28 d。结果:随着日粮蛋氨酸添加水平的升高,猪的末重表现为显著二次曲线效应(P<0.05)。日增重、平均日采食量和料重比随日粮蛋氨酸铬添加水平的升高表现为显著线性升高(P<0.05)。随着日粮蛋氨酸铬添加水平的升高,眼肌面积表现为显著线性升高(P<0.05),而背膘厚度具有显著线性降低的趋势(P=0.07)。日粮铬添加水平从0升高至0.6 mg/kg时,猪肉剪切力和肌红蛋白含量具有显著线性升高趋势(P=0.06,P=0.07),但肌红蛋白含量及相关基因mRNA相对表达水平表现为显著二次曲线效应(P<0.05)。此外,肉色红度值随日粮铬水平的升高表现为显著二次曲线效应(P<0.05),而亮度值具有显著线性和二次曲线降低的趋势(P=0.07,P=0.06)。综上所述,日粮中添加蛋氨酸铬可促进生长性能,改善肉色,但增加了剪切力,降低了肌间脂肪含量。此外,肌红蛋白含量和相关基因mRNA表达水平的上调表明蛋氨酸铬可以通过上调肌红蛋白基因的表达来改善肉色。The experiment was conducted to evaluate the effects of dietary methionine chromium addition on growth performance,carcass traits and meat color of fattening pigs.600 ternary hybrid pigs(Duroc×Landrace×Yorkshire)with an average initial weight of(71.26±1.68)kg were selected and randomly divided into 4 groups with 5 replicates for each group and 30 pigs for each replicate.Methionine chromium 0,0.2,0.4 and 0.6 mg/kg in the form of chromium were added to the basal diet for 28 days.Results:with the increase of dietary methionine,the final weight of pigs showed a significant conic effect(P<0.05).Daily weight gain,average daily feed intake and feed weight ratio increased linearly with the increase of chromium methionine(P<0.05).With the increase of dietary methionine chromium addition level,eye muscle area showed a significant linear increase(P<0.05),while back fat thickness showed a significant linear decrease(P=0.07).When the dietary chromium content increased from 0 to 0.6 mg/kg,the pork shear force and myoglobin content showed a significant linear increase(P=0.06,P=0.07),but the relative expression level of myoglobin content and related gene mRNA showed a significant conic effect(P<0.05).In addition,with the increase of dietary chromium level,the color reddency value showed a significant conic effec(t P<0.05),while the brightness value showed a significant linear and conic decreasing tren(d P=0.07,P=0.06).In summary,the addition of chromium methionine to the diet promotes growth performance and improves color,but increases shear force and reduces intermuscular fat content.In addition,the upregulation of myoglobin content and mRNA expression levels of related genes suggested that chromium methionine could improve meat color by upregulation of myoglobin gene expression.
