摘  要:鹅肝脏是脂质合成和分泌的主要场所,具有很强的脂肪酸合成与存储能力,对脂肪变性有很强的易感性和耐受性。采用富含高能量碳水化合物的饲料超饲1~2周后,可破坏鹅肝脏脂质的代谢平衡,导致大量脂类迅速在肝脏中沉积,诱导肝脏发生脂肪变性,形成鹅肥肝。虽然,日粮诱导的鹅肝脏中脂肪异常沉积的主要机制仍未完全揭示,但是,经过国内外学者对鹅肝脏脂质代谢的研究和探索,鹅肝脏脂质代谢的关键途径和一些重要的调控因子已经逐步被阐明。文章综述了鹅肥肝的形成机理,鹅肝脏对脂肪变性的易感性和耐受性,并对未来研究方向进行展望。Goose liver is the main site of lipid synthesis and secretion. It has a strong ability of fatty acid synthesis and storage, and has a strong susceptibility and tolerance to steatosis. After overfeeding with high energy carbohydrate for 1 to 2 weeks, the lipid metabolism balance of goose liver was destroyed, and a large amount of lipid was rapidly deposited in the liver, resulting in fatty degeneration of liver and formation of goose fatty liver. Although the main mechanism of abnormal lipid deposition in goose liver induced by diet has not been fully revealed, the key pathway and some important regulatory factors of goose liver lipid metabolism have been elaborated through the research and exploration of domestic and foreign scholars on goose liver lipid metabolism. The article summerized the formation mechanism of goose fatty liver, the susceptibility and tolerance to steatosis of goose liver, and prospected the further research in future.
