摘　　要：为了解江苏省鸭蛋加工产业发展现状,江苏现代农业(水禽)产业技术体系对盐城、扬州、南通、泰州和淮安5市的48家鸭蛋加工企业进行深入调研。结果显示:江苏省鸭蛋加工企业区域分布集中度较高且靠近蛋源基地;蛋源以外购为主,产品质量不可控;鸭蛋加工产品结构单一,为咸蛋、皮蛋和咸蛋黄,主要经一级经销商、超市和线上销售;鸭蛋加工企业实际加工量远低于设计加工能力,平均开工率为42.22%;鸭蛋加工主要设备如鸭蛋清洗分级机、全自动真空拉伸膜包装机、高压灭菌锅,以国产品牌为主;鸭蛋加工产品品牌多,但影响力不大,仅"红太阳"在全国有一定的知名度。建议政府部门和业界从规划、原料、品控、品牌等角度谋求突破。To understand the development status of duck eggs processing industry in Jiangsu province,48 duck egg processing enterprises in Yancheng, Yangzhou, Nantong, Taizhou and Huaian city were deeply investigated by the Jiangsu Modern Agriculture(Waterfowl) Industry Technology System. The results showed as follows:The duck egg processing enterprises in Jiangsu province had relatively high concentration of regional distribution and were close to the cities where duck eggs were produced;Duck eggs of processing enterprises were mainly from outsourcing, which could result in the quality was uncontrollable;The product structure was unitary, comprising salted eggs, preserved eggs and salted egg yolks, and were mainly saled through initial distrubutors, supermarkets and online platforms;The actual processing capacity of duck egg processing enterprises was much lower than the designed processing capacity, with an average operation rate of 42.22%;The main duck egg processing equipments such as duck egg cleaning and grading machines,automatic vacuum stretching film packaging machines and the autoclave were dominated by domestic brands;There were many brands of duck egg products in Jiangsu province, but had little influences in the markets, only Hongtaiyang had a certain popularity in the country. It was suggested that the government departments and duck egg processing industry should seek a breakthrough from the perspective of planning, raw materials, quality control and brand.
