摘 要:蔬菜作为人类日常生活中不可或缺的食物,为人们提供丰富的矿物质、维生素、蛋白质、粗纤维等营养物质。随着城市化和工业化的不断发展,蔬菜中重金属超标事件时常发生。土壤作为蔬菜生长的重要环境介质,其重金属污染问题日益严峻。其中,土壤中镉的超标达7.0%,位居所有污染物的首位。蔬菜通过根部吸收土壤中的Cd,并通过食物链被人类食用,危害人体健康。本文从蔬菜中Cd的来源、Cd安全阈值以及Cd污染实例3个方面总结我国蔬菜重金属Cd污染的现状,通过蔬菜中Cd的富集规律和Cd对蔬菜生长发育的影响,概述目前蔬菜重金属Cd的理论研究进展,归纳常见的Cd污染蔬菜栽培地土壤的修复措施,并介绍新型的降低蔬菜重金属Cd积累的方法——蔬菜Cd生理阻隔剂,为更好研究Cd在蔬菜中的作用机制以及解决蔬菜作物可食部分Cd超标的安全问题等提供依据。Vegetables,as indispensable food in human daily life,provide people with abundant minerals,vitamins,proteins,crude fibers and other nutrients.With the continuous development of urbanization and industrialization,the Cd pollution of vegetables is increasingly serious.Cd in soil exceeded the standard by 7.0%,ranking first among all pollutants.Vegetables absorbed Cd from soil through their roots and were consumed by humans through the food chain,endangering human health.This study summarized the current situation of Cd pollution in vegetables of China by describing the sources of Cd,Cd safety threshold and Cd-contaminated examples in vegetables.Through expounding the rule of Cd enrichment in vegetables and Cd effect on the growth and development of vegetables,this study showed the current theoretical research progress of Cd in vegetables.Meanwhile,the common repair measures in Cd-polluted soil were summarized as well.And this paper introduced a new type of repair measures in vegetables Cd pollution,Cd physical blocking agent.It will help us better study the molecular mechanism of Cd in vegetables as well as provide the theoretical basis to figure out the security issues of excessive Cd in edible parts of vegetable crops.
