摘 要:在近代社会,欧美、俄国、日本等地区和国家的人口纷至沓来,涌入奉天,其在各城市开设餐馆,提供新的餐饮方式,又创办食品、酒水、饮料工厂,将其饮食文化带入了奉天。在此影响下,当地固有的饮食文化发生了改变,饮食趋于多样性,饮酒方式与酒文化更加丰富,奢靡之风也随之兴起。同时,外国移民的进餐方式和营养理念也开始为当地人效仿。奉天的饮食文化变迁体现出开放性、包容性、差异性、主体性等特征。总之,奉天民众对外来饮食文化加以吸收创新,形成了独特的区域文化,并对社会转型起到了一定的推动作用。In modern society,a great number of people from Europe,America,Russia,Japan and other regions and countries flocked into Fengtian region.They started restaurants in various cities,provided new catering methods,and established eating and drinking factories,and brought their catering culture into Fengtian region.Under this influence,the traditional local food culture has been changed,including that the diet has tended to be diverse,the way of drinking such as the wine culture has been increasingly abundant,and the extravagant trend has also been rising.At the same time,the way of foreign immigrants’eating customs and nutrition concepts has begun to be followed by the local people.The changes of food culture in the Fengtian region embody the characteristics of openness,inclusiveness,difference and subjectivity.In short,the people of Fengtian absorbed and innovated the foreign food culture,formed a unique regional culture and played a certain role in promoting social transformation.
