摘 要:目的考察超微粉碎技术对疏花蔷薇果中总有机酸和维生素C溶出的影响。方法采用紫外分光光度法测定疏花蔷薇果中总有机酸的提取率,HPLC法测定其中维生素C的含量,比较>250,250~150,150~100,100~50和<50μm等不同粒径粉末中总有机酸和维生素C的含量。结果粒径为>250,250~150,150~100,100~50和<50μm疏花蔷薇果粉末中总有机酸的含量分别为(2.58±0.02),(5.40±0.02),(8.61±0.07),(9.45±0.18),(9.66±0.07)mg·g-1(RSD<2%,n=3);维生素C的含量分别为(0.09±1.06),(0.57±2.30),(1.00±2.94),(1.02±1.22),(2.12±0.82)mg·g-1(RSD<3%,n=3)。随着粒径减小,总有机酸和维生素C的含量逐渐增大,其中粒径<50μm的含量最大,显著高于其他粉末(P<0.05)。结论超微粉碎后可以促进疏花蔷薇果中总有机酸和维生素C的溶出。Objective To investigate the effects of ultrafine pulverization on the dissolution of organic acids and vitamin C from the fruit of Rosa laxa R. Methods Ultraviolet spectrophotometry was used to determine the extraction rate of total organic acids, and HPLC was used to detect the content of vitamin C. Comparison of total organic acids and vitamin C in powders of different particle sizes as > 250, 250 ~ 150, 150 ~ 100, 100 ~ 50 and < 50 μm.Results The content of total organic acids were(2.58±0.02),(5.40 ±0.02),(8.61±0.07),(9.45±0.18),(9.66±0.07) mg/g(RSD<2%,n=3) respectively in the powders of >250, 250~150, 150~100, 100~50 and <50 μm, and vitamin C content were(0.09±1.06),(0.57±2.30),(1.00±2.94),(1.02±1.22),(2.12±0.82) mg/g(RSD<3%, n=3) respectively.With the decrease of particle size, the content of total organic acids and significantly higher than other powders(P<0.05). Conclusion Ultrafine pulverization technology can promote the dissolution of total organic acids and vitamin C from the fruit of Rosa laxa R.
