广西销售水果及其制品含糖量调查分析

摘  要:目的了解广西销售水果及其制品中的含糖量和组成,为糖尿病患者和对糖含量有要求的人群提供可靠参考依据。方法采用随机采样方式,利用高效液相色谱法,示差折光检测器对样品中的单糖和双糖(果糖、葡萄糖、蔗糖、麦芽糖)进行定量测定。色谱柱:CAPCELL PAK NH2(4.6 mm×250 mm,5μm);流动相:乙腈+水(75+25,V/V);流量:1.0 ml/min。结果水果类总糖含量为3.44 g/100 g^23.2 g/100 g,水果蜜饯及干果类总糖含量为15.3 g/100 g^58.4 g/100 g,水果饮料类总糖含量为6.02 g/100 g^11.2 g/100 g,水果酱类总糖含量为9.45 g/100 g^47.7 g/100 g,水果罐头类总糖含量为8.00 g/100 g^13.0 g/100 g。实验表明,水果中各单糖和双糖含量会随着水果成熟度不同而发生变化。结论水果及其制品中糖的组成和含量与水果类别、水果成熟度及其加工生产等有关;生产加工后的水果制品通常因人为加入了糖或脱水后,其含糖量大部分比原水果类高,消费者应合理食用,并加以重视。Objective To understand the sugar content and composition of fruits and their products sold in Guangxi Province,so as to provide reliable reference for the research on diabetes mellitus and the population with sugar content requirements.Methods Random sampling method was adopt and the monosaccharides and disaccharides(fructose,glucose,sucrose,maltose)were quantitatively determined by high performance liquid chromatography(HPLC)and refractive index detector(RID).Chromatographic column was CAPCELL PAK NH2(4.6 mm×250 mm,5μm);Mobile phase was acetonitrile+water(75+25,V/V).Results The total sugar content of fruits was within 3.44 g/100 g-23.2 g/100 g,that of preserves and dried fruits was within 15.3 g/100 g-58.4 g/100 g,that of fruit drinks was within 6.02 g/100 g-11.2 g/100 g,that of fruit jams was within 9.45 g/100 g-47.7 g/100 g,and that of canned fruits was within 8.00 g/100 g-13.0 g/100 g.The results showed that the contents of monosaccharide and disaccharide in fruit varied with the maturity of fruit.Conclusion The composition and content of sugar in fruits and its products are related to the type,maturity and processing of fruit.The sugar content of the processed fruit products is higher than that of the original fruit,so consumers should eat it reasonably and pay attention to it.
