摘　　要：海洋头足类动物的生产加工过程中会产生大量的下脚料。随着国内外加工产业的快速发展,对海洋头足类动物加工过程中产生的皮、内脏、眼、精巢、软骨等下脚料进行有效的回收利用,将会产生良好的经济和环保效益。鱿鱼、乌贼和章鱼等海洋头足类动物产品加工的下脚料中含有丰富的蛋白质、牛磺酸、多糖、多肽和胶原蛋白等天然物质,近年来,对该类动物下脚料加工利用的研究取得了一定进展。针对鱿鱼、乌贼和章鱼的下脚料在药品、保健品、化妆品和功能性材料等领域的应用研究进行了总结,并就其未来研究的方向进行了探讨。In the processing and production of marine cephalopods,offal accounts for a large proportion.With the rapid development of the processing industry at home and abroad,the effective recycling of the skin,viscera,eyes,testis,cartilage and other offal produced in the processing process has good economic and environmental benefits.In recent years,the research on the processing and utilization of offals has made progress at home and abroad.Considering the protein,taurine,polysaccharide,polypeptide and collagen contained in the offals of squid,cuttlefish and octopus,this paper summarized the application of squid,cuttlefish and octopus offals in medicine,health care products,functional materials and cosmetics,and discussed the future research direction.
