Investigation on Contamination of Alternaria Toxins From Wheat and Its Products Sold in Sichuan Province

摘  要:目的调查四川省市售小麦及其制品中链格孢霉毒素污染情况。方法采集264份四川省市售小麦粉及其制品。采用超高效液相色谱-质谱联用法检测4种链格孢霉毒素。结果样品中交链孢酚(alternariol,AOH)、交链孢酚单甲醚(alternariol monomethyl ether,AME)、交链孢菌酮酸(tenuazonic acid,TeA)和腾毒素(tentoxin,TEN)均有检出,含量均值为0.75μg/kg、0.57μg/kg、27.2μg/kg和4.78μg/kg,检出率分别为49.2%、86.4%、97.7%和96.0%。结论四川地区市售小麦粉及其制品中4种链格孢霉毒素均有不同程度污染。不同地区链格孢霉污染情况不同,川南地区Te A和TEN污染水平较其他监测区域高。小麦粉中TEN、TeA和AOH浓度水平高于挂面、面包、馒头和饼干。TeA和TEN、Te A和AOH、TEN和AOH、AME和AOH在样品中的浓度分布具有显著的相关性。Objective To investigate the natural occurrence of Alternaria toxins from wheat and wheatbased products sold in Sichuan province. Methods A total of 264 commercial wheat flour and wheatbased products samples were collected from Sichuan province and analyzed for four Alternaria toxins by ultra-high performance liquid chromatography-mass spectrometry. Results Alternariol(AOH)、 alternariol monomethyl ether(AME)、 tenuazonic acid(TeA) and tentoxin(TEN) were detected from samples. The average content of AOH、 AME、 TeA and TEN in commercial wheat flour and wheat-based products samples was 0.75 μg/kg、 0.57 μg/kg、 27.2 μg/kg、 4.78 μg/kg;the positive rate was 49.2% 、 86.4% 、 97.7% and 96.0%, respectivly. Conclusion There were different contamination degrees of four Alternaria toxins in wheat flour and its products in Sichuan. The concentrations of the four Alternaria toxins varied geographically. The TeA and TEN contamination levels were higher in samples from southern Sichuan than in those from others regions in Sichuan.The concentrations of TEN, TeA and AOH in wheat flour were higher than those in noodles,breads, steamed buns and biscuits. Positive correlation was observed between concentration levels in samples of TeA and TEN, AOH and TeA,TEN and AOH,AME and AOH.
