摘  要:目的了解公众的公筷认知与使用现状以及主要影响因素,为推广公筷提供科学依据。方法使用自行设计问卷进行网上随机调查。结果86.51%的调查对象对公筷定义有正确认知,以30~39岁组为最高;文化程度越高,正确认知率越高(均P<0.05)。28.70%的调查对象几乎一直使用公筷,中年年龄段高于青年年龄段,文化程度较高者高于文化程度较低者(均P<0.05)。前3位影响公筷使用因素是:"没有提供公筷""觉得都是熟人没有必要用""别人都不用,不好意思用",年龄越大越容易因为别人没用而不好意思用(P<0.05)。结论对儿童及青少年、老人、文化程度较低群体开展针对性干预。并应督促各餐饮单位积极承担起推行公筷公勺制的责任。OBJECTIVE To understand the current situation of public awareness and use of serving chopsticks and the main influencing factors,and to provide scientific basis for promoting the use of serving chopsticks.METHODS Randomized online surveys was performed by self-designed questionnaires.RESULTS 86.51%of the respondents had a correct understanding of the definition of serving chopsticks.Correct cognition of serving chopsticks in 30~39 years old group was the highest.The higher the education level was,the higher the correct cognition rate of serving chopstickswould be(P<0.05).28.70%of the respondents used serving chopsticks almost all the time(P<0.05).The use frequency of serving chopsticks in middle age group was higher than that in young age group.People with higher education level use serving chopsticks more frequently than those with lower education level(P<0.05).The top 3 reasons influencing the public’s use of serving chopsticks including"No serving chopsticks provided","no need for using serving chopsticks with acquaintances"and"embarrassed if no one else use the serving chopsticks".The older respondents were,the more likely they were to be embarrassed because others did not use serving chopsticks(P<0.05).CONCLUSION The targeted interventions for key target groups,such as children and young people,the elderly and less educated groups,should be strengthened.In addition,effective measures should be taken to urge all catering units to take on the responsibility of implementing the serving chopsticks.
