摘  要:目的研究并优选龟甲胶的制备工艺,为龟甲胶的制备及生产提供试验数据依据。方法以龟甲胶的出胶率和蛋白质含量为指标,采用单因素试验对不同影响因素进行考察,优选龟甲胶的制备工艺参数,以制备合格的龟甲胶。结果测定了龟甲胶蛋白质含量,以出胶率为指标,考察了煎煮压力、煎煮次数。初步结果显示:工作压力为80 kPa,煎煮次数为2次,结果较好。结论从现有结果来看,高温高压条件有利于龟甲胶制备,有效缩减龟甲胶制备时间,同时可提高龟甲出胶率,对传统制胶工艺进行了优化,可为相关龟甲制备工艺提供参考与借鉴。OBJECTIVE To study and optimize the preparation technology of turtle shell gum and provide experimental data for the production of turtle shell gum. METHODS The single factor test was used to investigate the different influence factors of turtle shell gum with its gelation rate and protein content as indexes,and the technological parameters of the preparation were selected to prepare the qualified turtle shell gum. RESULTS The protein content of tortoise shell gum was measured,and the rate of gelation was used as an indicator to investigate the pressure and frequency of decoction. Preliminary results showed that the working pressure were at 80 kPa and the number of decoctions for twice made the result better. CONCLUSION From the existing results,the conditions of high temperature and high pressure are beneficial to the preparation of tortoise shell glue,the preparation time of tortoise shell glue is reduced greatly,and the rate of gelation is increased. Optimizing the traditional technology can provide experimental data and methods for further preparation process research.
