摘  要:为了探明不同富锌浸种剂对玉米芽苗菜生长特性及营养品质的影响,试验采用4种螯合剂与七水合硫酸锌按1∶4的比例配制成富锌浸种剂,对玉米芽苗菜的生长特性、锌积累及营养品质进行比较研究。结果表明,与对照组(CK)相比,经七水硫酸锌(Z-Zn)处理的玉米芽苗菜的锌元素含量显著增加了227.2%;经柠檬酸+七水硫酸锌(C-Zn)处理的玉米芽苗菜的维生素C含量显著增加了36.1%,锌元素含量显著增加了202.6%;经木糖醇+七水硫酸锌(X-Zn)处理的玉米芽苗菜的发芽率显著增加了29.4%,发芽势显著增加了29.8%,锌元素含量显著增加了198.3%;经EDTA+七水硫酸锌(E-Zn)处理的玉米芽苗菜的发芽率显著增加了19.3%,POD活性显著增加了50.2%,锌元素含量显著增加了211.7%。综上所述,试验拟推荐使用E-Zn来提高玉米芽苗菜的锌元素含量。To explore the effects of different zinc-rich seed soaking agents on the growth characteristics and nutritional quality of corn sprouts,four kinds of chelating agents and zinc sulfate heptahydrate were used to configure zinc-rich seed soaking agent in a ratio of 1∶4 to compare the growth characteristics,zinc accumulation and nutritional quality of corn sprouts.The results showed that compared with control group(CK),zinc content of corn sprouts treated with zinc sulfate heptahydrate(Z-Zn)increased by 227.2%,vitamin C content of corn sprouts treated with citric acid+zinc sulfate heptahydrate(C-Zn)increased by 36.1%and zinc content increased by 202.6%.After treatment with xylitol+zinc sulfate heptahydrate(X-Zn),the germination rate,germination potential and zinc content of corn sprouts increased by 29.4%,29.8%and 198.3%,respectively.After EDTA+zinc sulfate heptahydrate(E-Zn)treatment,the germination rate of corn sprouts increased by 19.3%,POD activity increased by 50.2%,and zinc content increased by 211.7%.In conclusion,this study intends to recommend the use of E-Zn to improve the zinc content in corn sprouts.
