摘 要:以烤烟品种中烟100、豫烟13号和豫烟7号为试验材料,分别于烘烤过程中各关键温度点取样测量生理指标(水分、叶绿素、淀粉、总酚含量和淀粉酶活性)和颜色指标(红色值、绿色值、蓝色值、色相、饱和度和亮度),以探究烟叶烘烤过程中生理指标与颜色变化之间的相关性。结果表明:烟叶烘烤过程中,叶绿素和水分含量随着烘烤进程的推移,各品种间差异显著,中烟100的叶绿素降解速度与失水速度较为一致;豫烟13号变黄快,失水居中;豫烟7号的叶绿素降解较快,失水速度较慢。中烟100和豫烟7号的淀粉酶活性变化趋势较为一致,呈双峰变化趋势,豫烟13号的淀粉酶活性54℃之前一直上升,呈单峰变化趋势。3个品种的淀粉含量变化趋势一致,品种间差异不明显。颜色特征值显示,整个烘烤过程中绿色分量值最高,从38℃到烘烤结束,烟叶的红、绿分量远大于蓝分量;3个品种烟叶图像的色相值前期较高,随着烘烤时间的推移,色相值逐渐变小。通过相关性分析显示,叶绿素的降解速率、叶片失水速度以及总酚的含量变化均与烟叶外观颜色特征值呈显著相关,而淀粉酶活性和淀粉的含量与烟叶外观颜色值相关性不显著。Zhongyan 100,Yuyan 13 and Yuyan 7were used as the test material,respectively in each sampling measure physiological indexes(moisture,starch,chlorophyll,total phenol content and amylase activity)and color indicators(red value,green value,blue value,hue,saturation and brightness)were measured at key temperature during curing process to explore the correlation between physiological indicators and color changes.The results showed that the chlorophyll and moisture contents were significantly different among the varieties as the curing process continued during curing process.The chlorophyll degradation rate of Zhongyan 100 was consistent with the rate of water loss.Yuyan 13 turned yellow quickly,and the water loss was centered.The chlorophyll degradation of Yuyan 7 was faster,and the rate of water loss was slower.The amylase activity of Yan 100 and Yuyan 7 had the same change trend,showing a bimodal change trend.The amylase activity of Yuyan 13 increased uniformly before 54℃,showing a single-peak change trend.The starch content of the three varieties had the same trend,and the difference among the varieties was not obvious.The color characteristic values showed that the green component had the highest value during the entire curing process,and the red and green components of the tobacco leaves were much larger than the blue component from 38℃to the end of the curing process.The hue values of the three varieties of tobacco leaf images were higher in the early stage,and gradually decreased with the passing of curing time.Correlation analysis showed that the degradation rate of chlorophyll,the rate of leaf water loss and the change of total phenol content were all significantly correlated with the color appearance value of tobacco leaves,while the correlation between amylase activity and starch content and the appearance color value of tobacco leaves was not significant.
