摘 要:植物抗氧化肽因其来源广泛、高效安全在医药、化妆品和饲料领域拥有巨大潜力。其有效制备和分离纯化是研究开发的关键。文中分析了抗氧化肽制备和分离纯化方法,并对其结构鉴定、抗氧化性能和构效关系进行了评价,探讨了其应用和发展前景。前处理、酶种类和酶解条件对多肽的大小和活性均会产生影响;大孔树脂和膜分离技术只能得到粗多肽,通过色谱可获得纯化多肽;多肽的氨基酸组成和结构与其抗氧化活性密切相关。Plant antioxidant peptides have great potential in the fields of medicine,cosmetics and feed additives due to their advantages of wide source,high efficiency and safety.The effective preparation and purification are the key to their research and development.Focused on the analysis of the methods of their preparation and purification,their structural determination,antioxidant activities and structure-effect relationship were evaluated,and their application and prospect were discussed.Pretreatment,enzyme species and enzymatic hydrolysis conditions all affected the size and activity of peptides,macroporous resin and membrane separation techniques can only obtain crude peptides,purified peptides can be obtained by chromatography,the amino acid composition and structure of peptides were closely related to their antioxidant activity.
