摘 要:简析了中国茶叶生产消费现状及进出口贸易现状,提出了茶产业发展中存在的现实问题。系统概述了我国在茶树资源利用与品种选育、茶树全基因组与代谢调控机制、茶树土壤与营养调控分子机理、茶树逆境胁迫响应的分子机制、茶园绿色防控与质量安全、茶叶制造化学与品质化学机理、茶叶深加工与功能成分利用、茶与健康等8个方面的基础研究进展与成果,明确了基础研究在推进我国茶叶生产技术进步、产品品质提升方面的重要支撑作用。最后,从茶园生产与管理、茶叶加工技术、茶叶产品创新、茶叶贸易流通与消费等领域,展望了我国茶叶产业技术的发展趋势。This paper briefly analyzes the present situation of tea production and consumption,import and export in China,and points out the practical problems existing in the development of tea industry.The development and achievement on the basic research of the eight aspects was outlined systematically,including tea plant resources utilization and variety breeding,tea plant genome and metabolic regulation mechanism,tea plant soil and nutrition regulation mechanism,the molecular mechanism of tea plant response to adversity stress,green prevention and control of tea garden and quality safety,chemical mechanism of tea manufacture and quality formation,tea comprehensive processing and utilization of functional composition,tea and human health.It has been clear about the important support role of basic research in promoting China's tea production technology,improve quality of tea products.Finally,the development trend of tea industry technology in China is prospected from the fields of tea garden production and management,tea processing technology,tea product innovation,tea trade circulation and consumption.
