摘　　要：本试验研究了以闽东福鼎的栀子为原料,提取栀子黄色素的最优工艺条件。采用单因素试验和正交试验,研究乙醇浓度、温度、固液比和提取时间等影响因素,提取栀子黄色素的最优提取工艺条件为:70%乙醇、温度40℃、固液比为1∶5和提取时间为3 h。This experiment studied the optimum technological conditions for extracting gardenia yellow pigment from gardenia of Fuding in eastern Fujian.Through single factor test and orthogonal test,four influencing factors of ethanol concentration,tem⁃perature,solid-liquid ratio and extraction time were discussed,and the optimal extraction process was obtained as follows:70%ethanol,temperature 40℃,solid-liquid ratio 1∶5 and extraction time 3h.
