摘 要:玉米淀粉渣中富含醇溶蛋白,醇溶蛋白具有广泛的应用价值,但不溶于水。因此,研究其提取工艺有重要意义。以玉米淀粉渣为原料,优化玉米醇溶蛋白的提取工艺,以物料比、提取温度和提取时间进行单因素实验,考察其对提取醇溶蛋白的影响。利用三因素三水平的正交试验,以吸光度为指标,确定了最优条件为物料比1∶13、提取温度70℃、提取时间1.5 h。Cornstarch residue is rich in gliadin,which has a wide range of applications,but is insoluble in water.Therefore,To study its extraction process has important application value.In this paper,cornstarch residues were used as raw materials to optimize the extraction process in zein.Single factor experiments were carried out to investigate the effect of material ratio,extraction temperature and the time on the extraction of zein.The optimum conditions were determined by the orthogonal test of three factors and three levels,with the absorbance as the index:the ratio of materials was 1∶13,the extraction temperature was 70℃,and the extraction time was 1.5 h.
