摘 要:为了研究不同地区边鸡和罗曼褐鸡的肉品质,试验选取各地区在相同条件下饲养的6月龄孵化后代边鸡,并以内蒙古自治区包头市引入品种罗曼褐鸡后代作为对照组,边鸡后代作为试验1~7组,每组8只,取胸肌和腿肌各50 g,搅碎混匀后通过全自动氨基酸分析仪测定各组鸡肌肉中的氨基酸组成及含量。结果表明:试验1,6组边鸡肌肉中的儿童必需氨基酸/总氨基酸值(CE/T)显著高于对照组(P<0.05),试验2,4,5组边鸡肌肉中的儿童必需氨基酸/总氨基酸值极显著高于对照组(P<0.01),试验6组边鸡肌肉中的甜味类氨基酸丝氨酸和儿童必需氨基酸组氨酸含量显著高于对照组(P<0.05),试验3,7组边鸡肌肉中的各类氨基酸含量与对照组差异不显著(P>0.05)。说明试验6组边鸡肌肉比罗曼褐鸡肌肉风味更好,试验1,2,4,5,6组边鸡比罗曼褐鸡对人尤其是儿童食用价值更高。In order to explore the meat quality of Bian chicken and Lohmann brown chicken, Six-month-old offspring of Bian chickens from different regions under same feeding condition were selected,and the offspring of Lohmann brown chickens introduced from Baotou,Inner Mongolia were the control group. The offspring of Bian chickens were experimental 1-7 groups. There are 8 groups with 8 chickens in each group. Fifty gram of the pectoralis muscle and fifty gram of the leg muscle were taken respectively, the amino acids composition and content in the muscles of each group chickens were determined by automatic amino acid analyzer after mashing and mixing. The results showed that the values of essential amino acids for children/total amino acids in experimental group 1 and 6 were significantly higher than those in the control group(P<0.05), children/total amino acids in experimental group 2, 4 and 5 were significantly higher than those in the control group(P<0.01), and the content of sweet amino acids(serine) and essential amino acids for children(histidine) in chicken muscles in experimental group 6 were higher than those in the control group(P<0.05), while the content of various amino acids in the muscles in experimental group 3 and 7 was no significant difference compared with the control group(P>0.05). It indicated that the muscle flavor of Bian chickens in experimental group 6 was better than that of Lohmann brown chickens, and the edible value of Bian chickens in experimental group 1, 2, 4, 5, and 6 for children were higher than that of Lohmann brown chickens.
