摘 要:随着现代肉类食品工业的发展,低脂肪的清真肉类食品的开发和推广已经成为现代肉类食品的主流,在家庭餐桌和餐饮消费中被广泛的选择。同时也给我们的生活、工作等带来了极大的便利。清真牛羊肉制品以其丰富的蛋白质、少量的脂肪,丰富微量元素,并且借助于现代化的生产工艺和强大的技术保障,成为现在餐桌中的主流,其消费量在我国已得到了快速的发展,并形成了一定的规模。但是我国无论是从牛羊肉产量、质量、人均消费和科技含量方面与发达国家相比,都存在着较大差距,这就需要清真牛羊肉企业在发展中坚持技术创新,坚持管理创新,坚持生产创新,不断的满足客户需求。With the development of modern meat food industry,the development and promotion of low-fat halal meat foodhad become the mainstream of modern meat food.It was widely chosen in family dining table and catering consumption,and it also brought great convenience to our life and work.Halal beef and mutton products had rich protein,small amount of fat and rich microelement,and modern production technology and strong technical support were adopted,and halal beef and mutton productsbecame the mainstream in the dining table now.The consumption developed rapidly in our country,and a certain scale was formed.However,our country was compared withdeveloped countries,there were great difference in output,quality,per capita consumption and technology,halal beef and mutton enterprises were required to insist on technological innovation,management innovation,production innovation and meeting customer demands in development.
