摘 要:为探究高位池与传统池塘养殖大口鲶肌肉营养品质的差异,试验选取同一地区不同养殖模式相同饲料源投喂的大口鲶。两组分别选取5条体重相近的鱼,测定形体指标,肌肉常规营养成分及氨基酸含量。结果显示:高位池组大口鲶的肥满度和脏体比均显著低于传统池塘组(P<0.05);高位池组大口鲶肌肉中除粗脂肪含量显著低于传统池塘组外(P<0.05),其他各项指标均无显著差异(P>0.05);高位池组大口鲶肌肉中赖氨酸、苯丙氨酸、组氨酸和谷氨酸含量均显著高于传统池塘组(P<0.05),氨基酸总量(TAA)、必需氨基酸(EAA)和鲜味氨基酸总量也均高于传统池塘组,但差异不显著(P>0.05)。研究表明,高位池养殖大口鲶的肌肉品质总体上优于传统池塘。In order to investigate the difference in muscle nutritional quality between the Silurus meridionalis cultured in higher-place ponds and those cultured in traditional ponds.Five fish with similar body weight were selected in the two groups to measure the body index,the routine nutritional composition of muscle and the content of amino acid.The results showed that the condition factor and viscera somatic index of the Silurus meridionalis in higher-place ponds were significantly lower than those in traditional pond(P<0.05).The crude fat content in the muscle of the Silurus meridionalis in higher-place ponds was significantly lower than that in traditional ponds(P<0.05),and there was no significant difference in other indexes(P>0.05).The contents of lysine,phenylalanine,histidine and glutamic acid in higher-place ponds group were significantly higher than those in traditional ponds(P<0.05),and similar results were found in the contents of total amino acids(TAA),essential amino acids(EAA)and delicious amino acids,but the difference was not significant(P>0.05).It could be concluded that the muscle quality of Silurus meridionalis cultured in higher-place ponds is better than that in traditional ponds.
