摘　　要：林蛙油是我国动物性中药中珍贵的滋补品,具有补肾益精、养阴润肺之功效。林蛙油含有丰富的天然营养成分,包括蛋白质、氨基酸、多糖、类固醇、脂肪酸、磷脂、维生素等。随着人们健康意识的逐渐提高,林蛙油经常作为补品食用,因此,市场需求也随之增加,又因其价格相对较高,诱惑较大,导致林蛙油伪劣品大量出现,严重影响林蛙油市场的健康发展。本文对林蛙油中的主要化学成分,真伪鉴别技术进行综述,以期为准确、快速鉴别林蛙油的真伪,保健食品的研究开发提供参考。Oviductus ranae is a precious tonic in animal-based traditional Chinese material,It has the effect of tonifying kidney and essence,nourishing yin and moistening lung.The natural nutrients composition is copious in Oviductus ranae,including protein,amino acids,polysaccharides,steroids,fatty acids,phospholipids,vitamins and so on.With the gradual improvement of people’s health awareness,Oviductus ranae is often used as a tonic,so the market demand is also increasing.Because of its relatively high price and great temptation,a large number of adulterants Oviductus ranae products appear,which seriously affects the healthy development of Oviductus ranae market.This paper reviewed the main chemical components in Oviductus ranae and the authenticity identification techniques of Oviductus ranae,in order to provide reference for the accurate and rapid identification of Oviductus ranae and the research and development of functional food.
