摘  要:本文研究7种云南常见可食用昆虫对ABTS+自由基的清除作用。采用超声破壁技术提取制备7种可食用昆虫的乙醇提取物,研究加热对可食用昆虫ABTS+自由基清除能力的影响。通过线性拟合计算获得ABTS+自由基清除的半数抑制浓度IC50值。结果表明:所测7种可食用昆虫中ABTS+自由基清除能力最强的为金蝉,最弱的为虾巴虫。7种可食用昆虫经过烹饪加热后其醇提液ABTS+自由基清除能力均有不同程度改变,其中金蝉以及虾巴虫ABTS+自由基清除率分别升高36.2%和31.4%,竹虫和蝗虫分别降低19.3%和12.8%,柴虫、蜂蛹和蚕蛹变化不大。7种可食用昆虫醇提液均对ABTS+自由基具有良好的清除作用,且富含蛋白质氨基酸,营养价值高,具有很好的开发利用价值。本文实验方法简单、可靠,为居民日常生活中合理食用昆虫提供参考。The aim of this papers is to study the scavenging effects on ABTS+free radicals of seven common edible insects in Yunnan.The ethanol extracts of seven edible insects were prepared by ultrasonic wall breaking technique,and the effects of Maillard reaction on ABTS+radical scavenging ability of edible insects were studied.The half inhibitory concentration IC50 value of scavenging ABTS+free radicals was calculated by linear fitting.Results shows that the ability of scavenging ABTS+free radical by Chrysopa cicada was the strongest,while that of dragonfly larvae was the weakest.After cooking,the ability of scavenging ABTS+free radical of alcohol extract of edible insects changed in varying degrees.The ABTS+free radical scavenging rates of cicada and dragonfly larvae has increased by 36.2%and 31.4%respectively,while bamboo insects and grasshoppers has decreased by 19.3%and 12.8%respectively,but there were little changes in Chai worm,Honeybee Pupa and silkworm chrysalis.The alcohol extracts of 7 edible insects have good scavenging effect on ABTS+free radicals,and are rich in protein and amino acids,with high nutritional value,which has a good development and utilization value.The experimental method is simple and reliable,which can provide reference for residents to eat insects reasonably in daily life.
