摘 要:【目的】对‘红阳’猕猴桃果实品质特征进行综合评价,为后期重庆市‘红阳’猕猴桃的种植布局及其果实品质的提升提供理论依据。【方法】以重庆市12个区县的‘红阳’猕猴桃果实为材料,测定分析单果质量、果形指数、可溶性固形物含量、可溶性糖含量、可滴定酸含量、维生素C含量、干物质含量、固酸比、糖酸比9个重要品质指标;采用主成分分析法对该市不同区县‘红阳’猕猴桃的果实品质进行综合评价。【结果】猕猴桃各品质指标的测定数据经隶属函数标准化处理后,降低了评价数据的冗余度,再经主成分分析,提取得到3个主成分,其累积方差贡献率为80.692%,可以代替原有的9个品质指标;第1主成分包含了果实果形和酸度方面的信息,第2主成分包含了果实质量和甜度方面的信息,第3主成分包含了果实风味和营养方面的信息。12个区县所产‘红阳’猕猴桃果实品质的综合评价结果为:黔江区、奉节县、酉阳县、彭水县所产果实品质均优良,武隆区、万盛区、南川区所产果实品质均为中等,城口县、万州区、永川区、开州区、江津区所产果实品质均较差。【结论】黔江区是重庆市最适宜种植‘红阳’猕猴桃的区县,该区所产果实风味好、口感佳、品质优,建议发展壮大种植规模,形成特色优势产业。【Objective】To provide theoretical basis for planting layout and quality improvement of‘Hongyang’kiwifruit in Chongqing,the fruit quality characteristics of‘Hongyang’kiwifruit was comprehensively evaluated.【Method】The fruits of‘Hongyang’kiwifruit from 12 districts and counties in Chongqing were used as materials.Nine important quality indicators including single fruit mass,fruit shape index,soluble solids content,soluble sugar content,titratable acid content,vitamin C content,dry matter content,solid-acid ratio and sugar-acid ratio were determined and analyzed.The fruit quality of‘Hongyang’kiwifruit in different districts and counties was comprehensively evaluated by principal component analysis(PCA).【Result】The quality indicators data of kiwifruit were standardized by membership function to reduce the redundancy of evaluation data.Three principal component factors were extracted by principal component analysis,and their cumulative variance contribution rate was 80.692%which could replace the original 9 quality indicators.The first principal component contains information about fruit shape and acidity,and the second principal component contains information about fruit mass and sweetness,and the third principal component contains information about fruit flavor and nutrition.The comprehensive evaluation results of fruit quality of‘Hongyang’kiwifruit in 12 districts and counties were as follows:the fruit quality of kiwifruit in Qianjiang District,Fengjie County,Youyang District and Pengshui County was good,and that in Wulong District,Wansheng District and Nanchuan District was medium.The fruit quality in Chengkou County,Wanzhou District,Yongchuan District,Kaizhou District and Jiangjin District was poor.【Conclusion】Qianjiang District is the most suitable place for planting‘Hongyang’kiwifruit in Chongqing,with good fruit flavor,good taste and good quality.It is suggested to develop and expand the planting scale and form a characteristic advantage industry.
