摘  要:目的:探讨日粮添加不同水平烟酰胺对AA肉仔鸡屠宰性能和肉质的影响。方法:选取1日龄AA肉仔鸡160只,随机分为对照组(饲喂基础日粮)和试验Ⅰ、Ⅱ、Ⅲ组(基础日粮基础上分别添加30、60、90 mg/kg烟酰胺),每组设置4个重复,每个重复10只,试验期为7周。在4周龄和7周龄每组随机选取6只AA肉仔鸡(公母各半),空腹称量其宰前体重后按常规方法屠宰,测量各组屠宰性能和肉质性状。结果:基础日粮中添加30 mg/kg烟酰胺可显著提高AA肉仔鸡4周龄时的腿肌a*值(P<0.05),降低7周龄时腿肌的b*值(P<0.05),提高4周龄和7周龄时的屠宰率(P<0.05);60 mg/kg烟酰胺处理7周显著提高AA肉仔鸡的胸肌率(P<0.05),并降低腿肌b*值(P<0.05);补充90 mg/kg烟酰胺可以显著提高7周龄AA肉仔鸡的胸肌率(P<0.05),增加腿肌的pH值(P<0.05),降低腿肌的b*值以及胸肌的滴水损失率和剪切力(P<0.05)。结论:基础日粮中添加低剂量烟酰胺(30 mg/kg)可较好提高AA肉仔鸡屠宰性能,而添加高剂量烟酰胺(90 mg/kg)可较好改善肉质性状。Objective:To investigate the effects of different supplemental levels of niacinamide on slaughter performance and meat quality of AA broilers.Methods:A total of 160,1-day-old AA broilers were selected and randomly assigned to the control group(fed with basal diet)and the experimental groups I,II and III(basal diet supplemented with 30,60 and 90 mg/kg niacinamide respectively),with 4 replicates in each group and 10 broilers in each replicate.The experimental period was 7 weeks.Six AA broilers(half male and half female)were randomly selected from each group at the age of 4 weeks and 7 weeks.The body weight before slaughter was weighed on an empty stomach,and then slaughtered according to the conventional method.Slaughter performance and meat quality traits were measured.Results:The addition of 30 mg/kg niacinamide in basal diet significantly increased the a*value of leg muscle at 4 weeks of age(P<0.05),decreased the b*value of leg muscle at 7 weeks of age(P<0.05),and increased the slaughter rate at 4 weeks and 7 weeks of age(P<0.05);60 mg/kg niacinamide treated for 7 weeks increased significantly the breast muscle rate(P<0.05)and decreased the leg muscle b*value(P<0.05).Supplementation of 90 mg/kg niacinamide for 7 weeks significantly increased the breast muscle rate(P<0.05),increased the pH value of leg muscle(P<0.05),and decreased the b*value of leg muscle,drip loss rate and shear force of breast muscle(P<0.05).Conclusion:Low dose niacinamide(30 mg/kg)had better effect on improving slaughter performance of AA broilers,and high dose of niacinamide(90 mg/kg)had better effect on improving meat quality.
