摘 要:采用响应面分析法中的Plackett-Burman、Box-Behnken设计优化玉米芯菌酶协同发酵饲料的制备工艺条件,并对发酵前后的产品性能进行测定分析。结果表明:玉米芯菌酶协同发酵的最优工艺参数为玉米芯691.75 g/kg、复合益生菌菌液接种量质量分数2.01%、NSP酶(非淀粉多糖酶)0.71 g/kg。菌酶协同发酵后,玉米芯中大分子物质利用效率增加,蛋白质转化效率明显提高,产生了明显的酒香味和乳酸味,产品色泽、手感、质地也发生了明显改善,为制备发酵预混饲料提供了参考依据。To study the optimum process conditions of corncob fermentation by bacteria coupled with enzymes,the Plackett-Burman,Box-Behnken design of response surface analysis method was used and the product properties before and after fermentation were measured and analyzed.The results revealed that the optimal conditions of corncob fermentation by bacteria coupled with enzymes was corncob 691.75 g/kg,compound probiotic liquid inoculation amount 2.01%,NSP enzyme(Non-starch polysaccharide enzyme)0.71 g/kg.After fermentation by bacteria coupled with enzymes,the utilization efficiency of macromolecules matter in corncob increased,and the protein conversion efficiency also increased obviously.Corncobs fermentation feed exhibited a deeper color following fermentation,which produced a transparent wine-like and lactic acid scent,and the color and texture of the product changed obviously.The research in this paper can provide a reference for the preparation of fermented premixed feed.
