摘 要:为科学评价宁夏不同产地‘红嘎啦’苹果品质表现,本研究以宁夏回族自治区12个产地的‘红嘎啦’苹果为试验材料,依据水果品质测定标准检测‘红嘎啦’果实纵横径、偏斜度、单果重、去皮硬度、pH值、可溶性固形物含量、可溶性糖含量、可滴定酸含量、固酸比、糖酸比以及维生素C含量这11项指标,并通过方差分析、相关性分析、主成分分析以及聚类分析综合对比各产地‘红嘎啦’苹果综合品质。结果表明,不同产地间‘红嘎啦’苹果的11项品质指标均存在显著性差异,并且各指标间存在不同程度的相关关系;通过相关性分析和主成分分析筛选出单果重及可溶性糖、可滴定酸和维生素C含量作为宁夏地区‘红嘎啦’苹果品质评价的关键指标;利用4个主成分的得分及权重构造综合评价模型,得出青铜峡甘城子‘红嘎啦’苹果综合品质表现最好,固原原州区、中宁鸣沙、中卫沙坡头次之,中宁大战场的综合品质较差;聚类分析将12个产地聚成4类,与主成分分析结果一致,并根据各类产地品质指标的含量提出对果品后期销售的建议。In order to scientifically evaluate the quality performance of Red Gala apples from different producing areas in Ningxia Hui Autonomous Region,the apple samples from 12 producing areas were used as the test materials.Based on the fruit quality determination standards,11 indicators as longitudinal and transverse diameters of fruits,slope,single fruit weight,fruit hardness without peel,pH value,contents of soluble solids,soluble sugar and titratable acid,solid-acid ratio,sugar-acid ratio and vitamin C content were determined and the comprehensive quality of Red Gala apples were analyzed by variance analysis,correlation analysis,principal component analysis and cluster analysis.The results showed that there were significant differences in the 11 indicators among different producing areas,and there were different degrees of correlation between the indicators.The single fruit weight,soluble sugar,titratable acid and vitamin C content were selected as the key indicators for quality evaluation of Red Gala apples in Ningxia through correlation analysis and principal component analysis.The comprehensive evaluation model was constructed based on the scores and weights of the 4 principal components,and based on it,the overall quality of Red Gala apples was evaluated as the best in Ganchengzi of Qingtongxia,and better in Yuanzhou of Guyuan,Mingsha of Zhongning and Shapotou of Zhongwei.The overall quality of apples from Battlefield of Zhongning was poor.After cluster analysis,the 12 producing areas were clustered into 4 categories based on the overall quality,which was consistent with the result of principal component analysis.Some suggestions for later sales of Red Gala apple fruits from different producing area categories were put forward based on the content of various quality indicators.
