摘  要:微生物谷氨酰胺转氨酶(mTGase)作为一种性能优良的交联酶,用于提高蛋白质的加工性能。由于异肽键的生成,mTGase交联能够引起蛋白质消化率和免疫原性的变化;mTGase可能会作为乳糜泻患者的自身抗原,引发自身免疫疾病。为此,作者主要分析了mTGase交联对健康的影响和相应的检测手段,为mTGase的安全应用提供参考。Microbialtransglutaminase(mTGase),as a high-performance cross-linking enzyme,is often used to improve protein's techno-functional properties,however,more attention should be paid to the potential health problems caused by its protein cross-linking products and its own.Due to the formation of isopeptide bonds,mTGase cross-linking can cause the changes of protein digestibility and immunogenicity.mTGase may act as an autoantigen in patients with celiac disease,causing autoimmune diseases.Therefore,this paper mainly analyzes and discusses the health effects of mTGase cross-linking and the corresponding detection methods,in order to enrich and expand the research field of mTGase and provide reference for the safety application of mTGase.
