摘  要:为了解影响千日红花色苷稳定性的因素,本试验通过超声波法提取千日红中花色苷,考察花色苷在不同温度、光照、pH条件下的稳定性。结果表明:随着温度的升高,千日红花色苷的稳定性降低;在不同的pH条件下,花色苷呈现出不同的颜色,pH在3~6较为稳定;室内自然光照对花色苷的稳定性影响较小。低温和弱酸性条件下千日红花色苷的稳定性较强。In order to understand the factors affecting the stability of Gomphrena globosa L.anthocyanins,the Gomphrena globosa L.anthocyanins were extracted by ultrasonic method,and the stability of Gomphrena globosa L.anthocyanins under different temperature,light and pH conditions was investigated.The results showed that with the increase of temperature,the stability of Gomphrena globosa L.anthocyanins decreased;under different pH conditions,Gomphrena globosa L.anthocyanins showed different colors,and pH was more stable at 3~6;indoor natural light had little effect on the stability of Gomphrena globosa L.anthocyanins.The stability of Gomphrena globosa L.anthocyanins was stronger under low temperature and weak acid condition.
