摘　　要：羊肚菌作为中国四大名菌之一,食药用价值极高,产业发展前景极为广阔。从羊肚菌的生物学特性、营养与药用成分、菌种研发、栽培技术、采收方式、加工方式、效益风险等方面阐述了当前羊肚菌研究与利用的现状,并对今后的产业发展的方向提出了合理化建议,为我国羊肚菌的综合开发利用提供理论指导。Morchella esculenta is one of the four famous bacteria in China,which has very high medicine and food value,its prospect for industry development are bright.In the aspects of biological characteristics,nutrition and medicinal components,strain research and development,cultivation techniques,harvesting methods,processing methods,benefits and risks,etc,the current situation of research and utilization of Morchella esculenta was described in this paper,the rational suggestions for the future was put forward,so as to provide theoretical guidances for comprehensive development and utilization of Morchella esculenta in China.
