摘  要:以现有的3个品种葡萄花序(‘夏黑’‘北冰红’和‘意大利’)为试材,采用理化分析和隶属函数分析的方法,对葡萄花序的化学成分和抗氧化活性进行测定分析,并对葡萄花序的品质进行综合评价,以期为更好地开发利用人工疏除的葡萄花序提供参考依据。结果表明:不同品种的葡萄花序在化学成分组成上存在较大差异。根据隶属函数法分析,营养品质排序为‘夏黑’>‘北冰红’>‘意大利’,药用功能品质排序为‘意大利’>‘北冰红’>‘夏黑’,抗氧化品质排序为‘意大利’>‘夏黑’>‘北冰红’。结合多指标进行综合评价,‘意大利’综合品质最好,‘夏黑’次之,‘北冰红’较差。Taking three varieties of existing grape inflorescences(‘Xiahei’‘Beibinghong’‘Italy’)as test materials,the chemical constituents and antioxidant activities were determined and analyzed,and the qualities of grape inflorescences were evaluated comprehensively by physical and chemical analysis and membership function analysis,in order to provide a theoretical foundation for the better development and utilization of artificially removed grape inflorescences.The results showed that there were significant differences in chemical composition among different varieties of grape inflorescences.According to the subordinate function analysis,nutritional quality was ranked as‘Xiahei’>‘Beibinghong’>‘Italy’,medicinal function quality was ranked as‘Italy’>‘Beibinghong’>‘Xiahei’,antioxidant activity was ranked as‘Italy’>‘Xiahei’>‘Beibinghong’.Finally,combined with multiindex comprehensive evaluation,the comprehensive quality of‘Italy’was the best,followed by‘Xiahei’and‘Beibinghong’.
