摘  要:茶氨酸是非蛋白氨基酸,是一种重要的呈味物质,具有降血压、降血脂、减缓压力、抗疲劳、抗肿瘤等功效。采用单因素实验和响应面实验优化桑叶茶氨酸提取条件,并在此基础上测定17个桑树品种桑叶茶氨酸含量。结果表明,桑叶茶氨酸的最佳提取条件为温度80℃,时间3.5 h,料液比1∶20。17个桑树品种桑叶茶氨酸质量分数在11.32~20.91μg/mg,其中桑品种市平的桑叶茶氨酸含量最高,比含量最低的桑品种湛02号高了0.85倍;上、中、下各叶位之间桑叶茶氨酸含量差异不显著。上述结果可为深入研究桑叶茶氨酸的活性功能及其在药食产品的开发利用打下基础,也可为筛选制茶专用桑树品种提供参考。Theanine is the non-protein amino acid,and a kind of important flavor substance.It can lower blood pressure and lipid,relieve pressure,antifatigue,antineoplastic and so on.The extraction process of theanine from mulberry leaf was optimized based on single factor experiment and response surface analysis.Then,theanine contents in leaves of 17 mulberry varieties were determined.As the results indicated,optimum extraction conditions was to extract theanine from mulberry leaf at 80℃for 3.5 h at a solid-liquid ratio of 1∶20.Theanine contents in leaves of 17 mulberry varieties ranged from 11.32μg/mg to 20.91μg/mg.Among them,theanine content of mulberry variety Shiping was the highest,0.85 times higher than the lowest one of mulberry variety Zhan 02.Besides,there was no significant difference among theanine contents in the upper,middle and lower leaves.The result could lay a foundation for further study on the active function of mulberry theanine,and on its development and utilization as medicinal and edible product.Furthermore,it could also provide references for breeding special mulberry varieties for tea making.
