摘  要:基于提出的以冰浆为载冷剂的果蔬湿冷预冷系统,本文实验研究了苹果的预冷时间、降温速率、失重率和均匀度随冰浆喷淋流量(50~150 L/h)以及载冷剂种类(冰浆和冷冻水)的变化规律。结果表明:苹果的预冷降温速率随冰浆流量的增加而提高,达到一定值后趋于稳定;本系统中冰浆流量存在一个最佳值为125 L/h,其对应的预冷时间为105 min,降温速率为8.8℃/h,失重率为0.56%,均匀度为0.27;与以冷冻水为载冷剂的湿冷系统相比,以冰浆为载冷剂时,苹果的预冷降温效果更好,预冷时间缩短28 min,降温速率提高1.2℃/h,失重率减少0.41%,均匀度变化不大,表明应用于果蔬预冷保鲜更具有优势。Based on the proposed wet cooling system for fruit and vegetables with ice slurry as the cold medium,the variation laws of pre-cooling time,cooling rate,weight loss rate,and uniformity for apples are experimentally conducted by changing the ice slurry spray flow rate(50-150 L/h)and the type of cold medium(ice slurry and chilled water).The results showed that the pre-cooling rate of apples increased with the increase of the ice slurry flow rate,and tended to be stable after reaching a certain value.There is an optimum ice slurry flow rate(125 L/h),and the corresponding apple pre-cooling time,cooling rate,weight loss rate,and uniformity were 105 min,8.8℃/h,0.56%,and 0.27,respectively.Compared with the wet cooling system using the chilled water as the cold medium,the pre-cooling effect for apples in the system with ice slurry is better.Using ice slurry as the cold medium,the precooling time was shortened by 28 min,the cooling rate is increased by about 1.2℃,the weight loss rate is reduced by 0.41%,and the uniformity had little change.It shows that the ice slurry wet cooling system is more advantageous for the pre-cooling and fresh keeping of fruit and vegetables.
