摘 要:目的了解大同市城区餐饮业的餐饮具卫生状况,为今后的食品卫生监督工作及制定相关措施提供科学依据。方法依据GB 14934-1994《食(饮)具消毒卫生标准》,采用纸片法对大同市城区2016~2019年餐饮单位餐饮具消毒效果进行监测。结果 2016~2019年共监测样品1 448份,合格1 202份,总合格率为83.01%。4年的餐饮具卫生合格率分别为75.14%(266/354)、77.96%(290/372)、85.63%(310/362)、93.33%(336/360)合格率呈逐年上升趋势(P<0.01)。餐饮业的规模,消毒方法和保洁时间是影响餐饮业餐具消毒效果的主要因素。结论大同市城区餐饮业的餐饮具卫生情状况逐年有所改善。Objective To understand the sanitary condition of the catering industry in Datong city, so as to provide a scientific basis for the supervision of food hygiene in the future and the formulation of relevant measures. Methods According to the Sanitary Standard for Disinfection of Food(Drink) Utensils(GB14934-1994),the paper method was used to monitor the disinfection effect of tableware in urban catering units of Datong city from 2016 to 2019. Results A total of 1 448 samples were monitored during 2016-2019,and 1 202 samples were qualified, with a total qualified rate of 83.01%.The annual qualified rate of food and beverage sanitary ware was 75.14%(266/354),77.96%(290/372),85.63%(310/362) and 93.33%(336/360) respectively, showing an increasing trend year by year(P<0.01).The scale, antisepsis method and cleaning time of catering industry were the main factors affecting the disinfection effect of tableware in catering industry. Conclusion The sanitary conditions of the catering industry in Datong city have been improved year by year.
