摘　　要：以梅花鹿角为原料,采用碱溶酸沉法对其蛋白进行提取,利用胰蛋白酶对提取的鹿角蛋白进行酶解,得到鹿角多肽,利用FRAP法对不同酶解时间得到鹿角多肽抗氧化能力进行检测,并测定了不同浓度鹿角多肽对酪氨酸酶的抑制作用。结果表明,用1.5mol/L NaOH在pH8.5可沉淀较多蛋白,FRAP测定结果表明,胰蛋白酶水解4h时抗氧化活性较强,在200μg·mL^(-1)时,对酪氨酸酶的抑制率达131.78酪氨酸UmoL·L^(-1)。The protein of deer anlter was extracted by alkali dissolution and acid precipitation,trypsin was used to obtain polypetide of extracted protein,the antioxidant activity different enzymolysis time on obtained polypetide was detected by FRAP,and inhibitory effect on tyrosinase was determined of different concenton of obtained polypetide.The results showed that with 1.5 mol/L NaOH at pH8.5,more protein canbe precipitated.FRAP tests indicated that trypsin hydrolysis for 4 h has strong antioxidant activity and at the concentration of 200 ug.ml-1,inhibitory rate was 131.78 tryosine/Umol.L^(-1).
