摘  要:目的研制一款金钗石斛花饮品。方法冷冻干燥得到金钗石斛花干,通过水蒸气蒸馏得到金钗石斛花露和金钗石斛花提取液,以金钗石斛花露和金钗石斛花提取液为主要原料,配以柠檬酸、木糖醇和纯净水,通过单因素实验和正交实验获得最优配方,感官性评价获得良好的气味和口感,研制出金钗石斛花饮品。结果金钗石斛花饮品的最佳配方为:金钗石斛花露30%、金钗石斛花提取液3%、柠檬酸0.1%、木糖醇5%。依此配方制作的金钗石斛花饮品微红透亮、香气怡人、酸甜适中、滋味协调。经检测,金钗石斛花饮品中的主要活性成分总黄酮和多酚的含量分别为0.29%和0.98%,微生物检测到菌落总数18 CFU/mL,大肠菌群<1 CFU/mL,霉菌<1 CFU/mL,酵母<1 CFU/mL,金黄色葡萄球菌<1 CFU/mL,沙门氏菌未检测到。结论本研究采用单因素实验和正交实验,研制出金钗石斛花饮品,经检测,其理化指标和微生物指标达到饮品的标准要求。Objective To develop a Dendrobium nobile flower drink.Methods The dried flowers of Dendrobium nobile are obtained by freeze-drying,and the flower dew and the extract of Dendrobium nobile flowers are obtained by steam distillation.Dendrobium nobile flower dew and Dendrobium nobile flower extract were used as the main raw materials,together with citric acid,xylitol and pure water.The optimal formula was obtained by single factor experiment and orthogonal test.Results The best formula of functional drink of Dendrobium nobile flower:30%Dendrobium nobile flower dew,3%Dendrobium nobile flower extract,0.1%citric acid,and 5%xylitol.The Dendrobium nobile flower drink made according to this formula is reddish and translucent,has a pleasant aroma,moderately sour and sweetness,and has a harmonious taste.The main active ingredients in Dendrobium Nobile flower drink are flavonoids and polyphenols,and the total content was 0.29%and 0.98%,respectively.The total number of microbial colonies was 18 CFU/mL,coliform bacterium<1 CFU/mL,and molds<1 CFU./mL,yeast<1 CFU/mL,Staphylococcus aureus<1 CFU/mL,Salmonella is not detected.Conclusion In this study,the single factor experiment and orthogonal experiment were used to develop the Dendrobium nobile flower drink.After testing,the physical and chemical indicators and microbial indicators meet the standard requirements of the beverage.
