摘 要:重金属容易在藻类中富集,常见食用海藻中总砷的含量均处于较高水平,而总砷中的无机砷具有毒性,其是否超标关系到食品安全的重大问题,是限制食用的基础。采用液相-电感耦合等离子质谱联用法同时测定食用藻类中的亚砷酸根As(III)、砷酸根As(V)、砷甜菜碱(AsB)、砷胆碱(AsC)、一甲基砷(MMA)、二甲基砷(DMA)含量,准确测定不同形态砷在藻类中的含量,利于甄别样品是否符合食品安全要求,保障食用安全。在优化实验条件下,各形态砷线性相关系数均在0.9992以上,测得总无机砷检出限为0.0013 ug/L;无机砷RSD(n=5)为海带3.70%、裙带菜3.98%、紫菜2.63%,加标回收率在80.70%~88.62%之间,重现性良好。Heavy metals are easy to be enriched in algae.The content of total arsenic in common edible seaweeds is at a high level,while inorganic arsenic in total arsenic is toxic.Whether it exceeds the standard is related to the major problem of food safety and is the basis of limiting consumption.The contents of As(III),As(V),AsB,AsC,MMA,DMA in edible algae were simultaneously determined by LC-ICP-MS.The contents of different forms of arsenic in algae were determined accurately,which was helpful to identify whether the samples met the food safety requirements and ensure the food safety.Under the optimized experimental conditions,the linear correlation coefficients of arsenic species were above 0.9992,and the detection limit of total inorganic arsenic was 0.0013 ug/L.The RSD(n=5)of inorganic arsenic was 3.70%for kelp,3.98%for Undaria pinnatifida and 2.63%for Porphyra.The recoveries were between 80.70%and 88.62%with good reproducibility.
