摘 要:为探究补饲不同比例小麦替代全价配合饲料对稻鸭屠宰性能、常规肉品质和肌肉纤维组织学特性的影响。试验以270只20日龄的高邮麻鸭为研究对象,根据补饲日粮不同随机分为小麦、小麦等量替换50%全价配合饲料和全价配合饲料组,共3组,每组3个重复,每个重复30只鸭(公母各半)。试验期60 d。结果表明:①小麦日粮饲喂的母鸭腺胃重显著高于小麦日粮饲喂的公鸭、全价配合饲料和小麦等量替换50%全价配合饲料饲喂的稻鸭(P<0.05);小麦等量替换50%全价料配合饲料饲喂稻鸭,其腿肌重显著高于其他两组。②小麦等量替换50%全价配合饲料饲喂稻鸭胸肌的蛋白质、脂肪、胶原含量均显著升高(P<0.05),且母鸭腿肌蛋白质和胶原蛋白水平显著升高(P<0.05),公鸭脂肪含量也显著高于其他处理组(P<0.05);无论是胸肌还是腿肌,小麦等量替换50%全价配合饲料饲喂稻鸭肌肉水分的含量均明显低于其他两组(P<0.05)。③小麦等量替换50%全价配合饲料饲喂稻鸭胸肌肌纤维直径显著低于全价配合饲料饲喂。由此可见,用50%小麦代替商品饲料饲喂稻鸭,能提高鸭腿肌重量、增加肌肉营养养分的含量,并通过改变肌纤维组织学形态改善稻鸭的肉品质。To explore the effect of different ratios of wheat as a substitute for overhead price mixed feed on the slaughter performance,conventional meat quality and fiber traits of different sexes of ducks in paddy fields.In this study,270(20 d)Gaoyou ducks were selected as the test animals.All the ducks were randomly divided into three groups(A:Overhead price mixed feed,B:Wheat as a substitute for 50%overhead price mixed feed,C:Wheat),according to different supplementary diets.There were three replicates in each group with 30 ducks(half male and half female)and lasted for 60 days.The results showed as the following:①the glandular stomach weight of female ducks fed with wheat was significant⁃ly higher than that of male ducks,overhead price mixed feed and wheat as a substitute for 50%overhead price mixed feed(P<0.05).While the thigh muscles weight of ducks fed with wheat as a substitute for 50%overhead price mixed feed was significantly higher than other two groups.②The protein,fat and collagen content of the breast muscle of ducks fed with the wheat as a substitute for 50%overhead price mixed feed were significantly increased(P<0.05),the thigh muscles protein and collagen lev⁃els of female ducks and the fat content of male ducks were significantly increased than other treat⁃ment groups(P<0.05).No matter breast muscles or thigh muscles,the water content of the muscles of ducks fed with Wheat as a substitute for 50%overhead price mixed feed was significantly lower than oth⁃er treatment groups(P<0.05).③The diameter of pectoralis muscle fiber of ducks fed with Wheat as a substitute for 50%overhead price mixed feed was significantly lower than that overhead price mixed feed.It could be seen that feeding ducks with wheat as a substitute for 50%overhead price mixed feed can increase duck thigh muscle weight and muscle nutrient content,and improve the meat quality of ducks in paddy fields by changing the histological morphology of muscle fibers.
