摘 要:研究使用统一均化分析的方法测定葡萄籽形状尺寸、含水率、千粒重、籽仁所占葡萄籽质量分数、破壳所需最大剪切力和微观结构等,为葡萄籽破壳技术提供数据支持的同时找出最优破壳方法。试验结果表明,葡萄籽的宽度和厚度尺寸分别分布在3.4~4.0 mm和2.4~3.0 mm,外形为扁平的纺锤形;葡萄籽的微观结构表明,大量的油脂分子存在于籽仁中,外壳致密且坚硬,夹层壳与籽仁连接紧密,因此葡萄籽仁和夹层如何分离将是一个难点。含水率为7%的葡萄籽,所需破壳力约为35.1 N;含水率为27%的葡萄籽,所需破壳力约为26.1 N,破壳力随着含水率增加而减小。Grape seed shell breaking technology is the key link of grape seed kernel oil extraction.In this study,the shape and size,moisture content,1000 grain weight,the percentage of seed kernel in grape seed,the maximum shear force and microstructure are determined by repeated experiments and uniform homogenization analysis.Through the experimental study of these physical characteristics of grape seeds,we can provide data support for grape seed shell breaking technology and find out the optimal method.The results show that the width and thickness of grape seeds are 3.4-4.0 mm and 2.4-3.0 mm,respectively,and the shape of grape seeds is flat spindle;the microstructure of grape seeds show that a large number of oil molecules existed in the kernel,the shell is dense and hard,and the interlayer shell is tightly connected with the kernel.Therefore,the separation of the kernel and interlayer is a difficult problem.The moisture content of grape seeds is 7%.The required breaking force is about 35.1 N.When the moisture content of grape seed is 27%,the breaking force is about 26.1 N.The breaking force decreases with the increase of water content.
