摘 要:本试验旨在对湖羊及杜湖杂种羔羊生产性能和肉品质进行比较研究。选择遗传背景相同、生长状况良好的3月龄左右湖羊公羔(22.67±2.59 kg)和杜湖公羔(24.42±2.49 kg)各30只,每组设3个重复,每个重复10只。预饲期10 d,正试期60 d,测定其生产性能和肉品质。结果表明0~20、21~40 d、41~60 d和0~60 d杜湖杂种羔羊平均日增重显著高于湖羊羔羊(P<0.05)。杜湖杂种的宰前重、胴体重、屠宰率均显著高于湖羊(P<0.05),杜湖杂种眼肌面积显著高于湖羊(P<0.05),GR值和背膘厚度差异均不显著(P>0.05)。湖羊肉的失水率、剪切力和45 min肉色(L*和b*)均显著高于杜湖杂种(P<0.05),但pH、熟肉率及其它指标两者差异均不显著(P>0.05)。湖羊肉的胶黏性、硬度和咀嚼性均显著高于杜湖杂种(P<0.05)。由此可见,杜湖杂种羔羊的生长性能、屠宰性能、肉品质均优于湖羊羔羊,更适宜于肥羔生产。The purpose of this experiment was to compare the performance and meat quality of Hu sheep and crossbred of Hu sheep and Dorper sheep.30 male Hu lambs(22.67±2.59 kg)and 30 male crossbred of Hu sheep and Dorper sheep(24.42±2.49 kg)of 3 mouths old with the same genetic background and good growth condition were selected,with 3 replicates per group and 10 lambs per replicate.The prefeeding period lasted for 10 days and the trial period lasted for 60 days.The production performance and meat quality were determined.The results showed as follows:the average daily gain of crossbred of Hu sheep and Dorper sheep at 0-20,21-40,41-60 and 0-60 days was significantly higher than that of Hu lambs(P<0.05).The weight before slaughter,carcass weight and slaughter percentage of crossbred of Hu sheep and Dorper sheep were significantly higher than those of Hu sheep(P<0.05),the eye muscle area of crossbred of Hu sheep and Dorper sheep was significantly higher than that of Hu sheep(P<0.05),GR value and backfat thickness were not significantly different(P>0.05).The water loss rate,shearing force and meat color(L*and B*)of mutton at 45 min were significantly higher than that of crossbred of Hu sheep and Dorper sheep(P<0.05),but there were no significant differences in pH,cooked meat rate and other indexes(P>0.05).The stickiness,hardness and chewing ability of Hu sheep were significantly higher than those of crossbred of Hu sheep and Dorper sheep(P<0.05).It can be seen that the growth performance,slaughtering performance and meat quality of crossbred of Hu sheep and Dorper sheep are better than that of Hu lamb,which is more suitable for fattening lamb production.
