摘　　要：半乳甘露聚糖是中性多糖,具有优异的增稠、稳定和胶凝能力,广泛应用于食品、制药、生物医学和化妆品行业。有关半乳甘露聚糖的研究文献近年来逐渐增多,对半乳甘露聚糖的提取纯化技术、结构特征以及应用等方面进行了总结和概括,为半乳甘露聚糖的进一步深入研究和产品开发提供了参考。Galactomannan is a water-soluble polysaccharide with excellent thickening,stabilization and gelatinization ability.It is widely used in food,pharmaceutical,biomedical and cosmetic industries.The research literature on galactomannan has been increasing in recent years.The extraction and purification technology,structural characteristics and application of galactomannan are summarized and summarized,which provides reference for further in-depth research and product development of galactomannan.
