摘 要:家禽业的主要目标是增加胴体产量和降低胴体脂肪。由于禽肉消费的增加,使快速生长型肉鸡在育种过程中向降低饲料转化率发展,同时为了满足消费者的需求,重点考虑了一些经济性状如体重增加、饲料效率和胸肌产量,但现代商业鸡在腹部出现过多的脂肪沉积,日粮组成和饲喂策略可能为降低现代家禽品系体脂肪沉积提供实用和有效的解决方案。文章旨在阐明影响脂质代谢相关酶的作用机理及饲养策略对脂肪沉积的影响,为促进家禽瘦肉和肉品质提供理论依据。The primary objective of the poultry industry is to increase carcass yield and reduce carcass fat.Rapid growing broilers developed a tendency to reduce feed conversion during breeding due to increased poultry consumption,and economic traits such as weight gain,feed efficiency,and pectoral yield were taken into account in order to meet consumer demand,but modern commercial chickens developed excessive fat deposits in the abdomen.Dietary composition and feeding strategies may provide practical and effective solutions for reducing body fat deposition in modern poultry strains.The purpose of this review is to clarify the mechanism of lipid metabolism-related enzymes and the effect of feeding strategy on fat deposition,so as to provide theoretical basis for promoting lean meat and meat quality of poultry.
