基于快速气相色谱和气体传感器阵列的冷冻猪肉储存期检测方法研究

摘  要:猪肉在冷冻过程中质量呈现下降的趋势。但在冷冻猪肉现场检测过程中,需要先解冻后检测,这就很难评估在解冻过程中由于环境因素变化对样品产生的不利影响。本文采用快速气相色谱方法分离出冷冻猪肉样品的特异性挥发气体,以克服冷冻猪肉挥发气体浓度低的问题。采用气体传感器阵列检测气相色谱柱富集的气体,以非线性信号分析模型解析气体传感器阵列输出信号并选择特征值。将特征值与检测时间经过非线性拟合得到冷冻猪肉储存期检测模型,验证实验结果证明所构建的模型具有较高的检测精度。本方法有望在冷冻猪肉保存期分析中得到应用。The quality of frozen pork declines during storage. However, the frozen pork usually needs to be thawed before quality examination. It is difficult to evaluate the negative effects to the examination results introduced by the environmental factors during the thawing process. In this paper, the feature volatile gas of frozen pork samples was separated by rapid gas chromatography(GC)to overcome the problem of low concentration of volatile gas in frozen pork. The gases enriched by GC column were detected by gas sensor array. The output signal of gas sensor array was processed by non-linear signal analysis model, and the eigenvalue was selected. The pork storage time analysis model was developed by non-linear fitting regression between eigenvalue and time. Validation results demonstrated that this method had good detecting accuracy. The method is promising in frozen pork storage time rapid analysis.
