摘　　要：With a population of 120,000,the Dungan of Central Asia are descendants of Hui Muslims who fled China in the 1800 s.Following Islam,cooking Chinese recipes,and speaking a Mandarin dialect written in Cyrillic,they have held on to their unique heritage despite the forces of modernization.
