摘  要:近年来,农产品加工行业出现了多种加工模式,不同加工模式的用水流程有着较大的差异性,单一的农产品用水定额已经不适应现在复杂多变的行业模式。在实地调研的基础上,以具有行业代表性的脱水蔬菜企业为研究对象分析农产品加工行业用水现状,根据脱水蔬菜具体用水流程和用水量,将生产模式分为外加工、自加工,将自加工过程分为清洗、烫煮、冷却、消毒、烘干、车间和设备清洗6个环节,分析导致用水情况差异的影响因子,再分类确定用水定额,外加工生产企业用水定额值为6.4 m^(3)/t,自加工生产企业用水定额值为54.0 m^(3)/t.自加工各类细分用水定额值为39.9〜60.0 m^(3)/t。In recent years,a variety of processing models have emerged in the agricultural product processing industry,and the water use processes of different processing models are quite different.A single agricultural product water quota is no longer suitable for the current complex and changeable industry model.Based on field investigations,this article analyzes the current situation of water consumption in the agricultural product processing industry with representative dehydrated vegetable companies in the industry.According to the specific water flow and water consumption of dehydrated vegetables,the production mode is divided into external processing and self-processing.The processing process is divided into 6 links:cleaning,blanching,cooling,disinfection,drying,workshop and equipment cleaning,and analyze the influencing factors that lead to differences in water usage,and then classify and determine the water quota The water quota for external processing and production enterprises is 6.4 m^(3)/t the water quota value of self-processing and production enterprises is 54.0 m^(3)/t.The water quota for various subdivisions of selfprocessing is 39.9〜60.0 m^(3)/t.
