摘 要:果肉颜色是评价甜瓜品质的重要指标之一,为探究甜瓜发育过程中色素类物质变化规律,以白肉型(Z)、绿肉型(F)、浅橘红肉型(C)、橘红肉型(X)等4个不同果肉颜色的网纹甜瓜品种为材料,研究甜瓜果实发育过程中类胡萝卜素和叶绿素含量的变化情况。结果表明,不同果肉颜色类型的甜瓜在发育过程中类胡萝卜素与叶绿素含量各有不同。C型、X型甜瓜的类胡萝卜素含量随果实生长发育均呈上升趋势,网纹形成期、糖分累积期为类胡萝卜素含量快速合成阶段,X型甜瓜则多以果肉中、下部含量较高。C型、X型甜瓜果肉中叶绿素a多呈下降趋势,叶绿素b有所升高;Z型甜瓜果肉中叶绿素a呈下降趋势;F型甜瓜在糖分累积期叶绿素a快速积累,达到6.66μg·g^(-1)。类胡萝卜素和叶绿素含量的变化形成了不同类型甜瓜的果肉颜色。Flesh color is one of the important indexes to evaluate the quality of muskmelon.In order to explore the changes of pigment substances during the development of muskmelon,four netted melon varieties with different flesh color:white flesh type(Z),green flesh type(F),light orange red flesh type(C)and orange red flesh type(X)were used to study the changes of carotenoids and chlorophyll contents during the development of muskmelon.The results showed that the content of carotenoids and chlorophylls in melons with different flesh color types had different and significant differences during development.The carotenoid content of C-type and X-type melons increased significantly.The rapid synthesis stage of carotenoid content was at the formation stage of reticulation and sugar accumulation.The content of carotenoids in the middle bottom of X-type melon was the highest.The content of chlorophyll-a in C-type and X-type melons decreased,while chlorophyll-b increased;Z-type melons showed a downward trend;in sugar accumulation stage,chlorophyll-a of F-type melon rapidly accumulated,reaching 6.66μg·g^(-1).The changes of carotenoid and chlorophyll content formed the flesh color of different types of melon.
