摘 要:中国白酒的智能化酿造是历史必然,本研究针对传统摊凉方式及目前市售链式摊凉机器的局限性,设计研发出一种转筒摊凉系统,有摊凉和拌曲两大作用。通过对该设备的生产应用,研究发现:在符合白酒酿造工艺机理的前提下,该设备具能效降低能耗,降低酒醅摊凉温度,去除摊凉拌曲中的黏连、结团现象,解决传统摊凉机易堵料、漏料的问题,对白酒的摊凉工艺具有明显的改善作用。The intelligent brewing of baijiu is a historical necessity.In view of the limitations of the traditional cooling methods and the current cooling machines,this study designed and developed a rotating drum cooling system,which had two functions:cooling fermented grains and mixed daqu.Through the production and application of the equipment,it was found that,on the premise of conforming to the liquor brewing process mechanism,the equipment had the advantages of reducing energy consumption,reducing the cooling temperature of fermented grains,removing the phenomenon of sticky,and solving the problems of material blocking and leakage in the traditional cooling machines,etc.It could effectively improve the baijiu cooling process.
