摘  要:通过利用圆二色谱仪和红外光谱仪探究绢纺精炼液中丝胶蛋白的二级结构,利用高速分散机剪切的方式探究丝胶蛋白的起泡性。试验结果表明:因丝胶蛋白是球状蛋白质,表现出其二级结构中无规卷曲占主要比例,约为45.6%,也含有部分β构象,其中β-折叠约占29.5%,β-转角约占23.7%,α螺旋结构含量较少,约占总量的3.9%;丝胶蛋白具有良好的稳定的起泡性。The secondary structure of sericin in silk spinning refining solution was studied by circular dichroism and infrared spectrometer,and the foaming property of sericin was studied by cutting with high-speed disperser.The results showed that because sericin protein is globular protein,the secondary structure of it is mainly random curl,accounting for about 45.6%of the total,and there is also someβConformation(β-Folding andβ-Corner,accounting for 29.5%and 23.7%,respectively),with a small amount ofαSpiral structure,accounting for about 3.9%of the total.Sericin protein has good and stable foaming property.
