摘　　要：鸡蛋的实际食用品质由蛋的品质优劣决定,鸡蛋品质的改变可直接或间接的改变鸡蛋的营养、食用价值以及实际的经济效益,如果蛋品质差的鸡蛋进入到百姓餐桌会使食用者的身体健康受到影响。因此,通过先进的实验室设备进行鸡蛋蛋品质的系统性检测,将成为蛋禽业进一步发展的重要工作,对蛋禽的饲养管理和选育具有重要的价值和意义。The actual edible quality of eggs is determined by the quality of the eggs.Changes in egg quality can directly or indirectly change the nutrition,edible value and actual economic benefits of eggs.If eggs with poor egg quality enter the people’s dining table,it will make the consumers feel bad.Physical health is affected.Therefore,the systematic detection of egg and egg quality through advanced laboratory equipment will become an important task for the further development of the egg and poultry industry,and has important value and significance for the breeding,management and breeding of egg and poultry.
