花[鱼骨]肌肉脂肪酸组成分析

摘　　要：为了解花[鱼骨]肌肉脂肪酸组成成分,本实验采用气相色谱法对花[鱼骨]肌肉脂肪酸组成及含量进行测定。本次实验共从花[鱼骨]肌肉中检测出17种脂肪酸,其中油酸相对含量最高,为28.74%,其次是棕榈酸和亚油酸,相对含量均超过20%。根据脂肪酸不同类别对数据进行整合分析,结果显示:饱和脂肪酸5种,总量为30.20%;单不饱和脂肪酸3种,总量为33.55%,多不饱和脂肪酸共检出9种,总量为36.25%;此外,在花[鱼骨]肌肉样品中检测出二十碳五烯酸和二十二碳六烯酸,两种脂肪酸的总量为5.17%。因此,花[鱼骨]是一种脂肪酸含量较为丰富的淡水鱼类。In order to examine the composition of fatty acids in muscle of Hemibarbus maculatus Bleeker, gas chromatography was used to determine the composition and content of fatty acids. In this experiment, 17 kinds of fatty acids were detected, among which oleic acid had the highest relative content of 28.74%, followed by palmitic acid and linoleic acid with relative content of more than 20%. The data were analyzed according to different categories of fatty acids. The results showed that: 5 kinds of saturated fatty acids, the total amount of 30.20%;there were 3 kinds of monounsaturated fatty acids(33.55%) and 9 kinds of polyunsaturated fatty acids(36.25%). In addition, eicosapentaenoic acid and docosahexaenoic acid were detected in the muscle samples, and the total amount of the two fatty acids was 5.17%. Therefore, the Hemibarbus maculatus Bleeker is a kind of fresh water fish rich in fatty acids.
