摘 要:玉溪市江川区大牲畜屠宰原来主要为家庭作坊屠宰,由屠宰经营户自行屠宰,未经检疫检验就上市销售流通,存在监管盲区。通过开展大牲畜定点集中屠宰,集中检疫检验,切实提高了牲畜肉品质量水平,极大降低未经检疫检验就上市流通的安全隐患。该文主要论述云南省玉溪市江川区开展大牲畜集中屠宰做法及经验。In Jiangchuan District,Yuxi,the slaughter of big livestock used to be mainly done by family workshops,which were slaughtered by slaughter operators themselves and sold and circulated without quarantine inspection.Through carrying out large livestock slaughter in designated areas and centralized quarantine inspection,the quality level of livestock meat has been effectively improved,and the potential safety hazard of marketing without quarantine inspection has been greatly reduced.This paper mainly discusses the practice and experience of mass slaughter of large livestock in Yuxi Jiangchuan district,Yunnan province.
